As we get ready to celebrate our 2nd Anniversary as a brewery, we’ve curated a selection of beers that we think showcase the best and most exciting of Wild Ambition from 2020. This special case offers a last chance at some of our now sold out products and a first taste at some of our final releases for the year. It’s all rounded out by a few other picks that we are super proud of and we think show off our unique contributions to the BC craft beer scene!
This case includes the following:
(NEW!) To Please or To Educate: Moscato Sour
This mixed-fermentation sour beer has been fermented on top of a large quantity of Muscat pomace from our friends at Horseshoe Found winery to create a dialog between brewer and vintner for you to enjoy in your own salon-inspired gatherings.
(NEW!) Most Likely To: Plum Sour
This can is filled to the brim with whole pit-in local plums full of potential that were grown just a stone’s throw north of the brewery. These were painstakingly cut up by hand and fermented in our mixed-fermentation sour beer for several weeks before packaging.
(NEW!) A Suggestion of Dark Places: Barrel Aged Merlot Sour
This bottle-conditioned beer was fermented with a full mixed culture on top of hundreds of pounds of pre-fermentation Merlot pomace from Arrowleaf Vineyards before maturing slowly in an oak puncheon that previously held red wine for approximately one year before bottling.
(NEW!) Entry Angle: Dry Hopped Sour with Lime and Mint
We worked with our friends at Freddy’s Bowl and Brew to take this full mixed-fermentation sour to another level and loaded it up with mojito inspired flavours. Lime zest, mint, and lime-forward New Zealand Motueka hops line up to hit that perfect strike. Brewed, canned, and naturally conditioned at our brewery in Kelowna, BC.
Sun in Flight: Biere Blanche
Our version of a classic belgian wit, this pale wheat ale has the traditional coriander and seville orange additions typically found in the style. We then fermented it with our house brettanomyces culture to give it a Wild Ambition flair!
Malbec Dark Saison
Crossing the boundaries between wine and beer, this dark farmhouse ale went through its primary fermentation in a tank alongside local malbec pomace before barrel aging. We then blended some sour barrel stock at bottling to add to the complex vinous acidity of the base beer.
Kelowner Wiesse: Authentic Berlin Style Sour
This bottle-conditioned ode to tradition contains a style of beer once referred to as the “Champagne of the north” in the 18th century. No boil, no kettle souring, no sugar syrups, just a petite sour fermented with a mixed culture of bacteria and yeast including strains of brettanomyces isolated from 1970s East German Berliner Weisse.
(SOLD OUT!) A Single Branch: Barrel Aged Red Sour with Cherries
We present to you the 2020 vintage of A Single Branch – our Flanders-inspired red sour with Balaton cherries. This beer was barrel aged for 4 months, re-fermented on a pile of local sour cherries for another 4 months, and then bottle conditioned for natural carbonation for another month prior to it’s release. The main differences from the previous vintage are a slightly darker malt bill to provide a little more sweetness and body as you would expect from a Flemish-inspired sour and a longer contact time on the cherries giving the beer a bit sharper acidity and bolder tannins to balance out that increase in malt character.
(SOLD OUT!) Reinvigorate: Barrel Aged Sour with Bright Jenny Coffee
This pale and tart barrel-aged beer was enhanced by the addition of a truly gorgeous Guatemalan coffee farmed by Jorge De Jesus Zuleta Castaneda – A man passionate about his craft, the coffee plantation where he has worked for 53 years and the environmental preservation of the coffee growing region he grew up in.
(SOLD OUT!) Dew Point: Azacca Farmhouse IPA
This release of Dew Point features Azacca – a hop bursting with assertive tropical and citrus peel notes and named after the Haitian Loa (spirit) of agriculture. The complex blend of spice, pith, mango, and pineapple from these relatively modern hops is enhanced by the earthy phenols and fruity esters of our Belgian ale yeast and blend of Brettanomyces strains we use for fermentation.
(SOLD OUT!) Rural Animal: Table Beer
Rural Animal is our take on a classic wallonian table beer – light, crisp, refreshing, and sessionable. This beer is brewed with 100% “old world” hops for bittering, aroma, and flavour and a mixture of BC grown barley malt, unmalted wheat, and a touch of caramelized malted oats to create a beer that definitely punches above its weight-class on flavour and body. The delicate spice flavours of the hops are balanced by the fermentation character of our favourite saison strain and inoculation at packaging by our favourite strains of brettanomyces.
(SOLD OUT!) Dying of the Light: Biere Noire
This is our interpretation of a dark take on a witbier with roasted wheat, cardamom and valencia orange instead of the pale wheat, coriander, and seville orange used in the classic. We then fermented it with our house brettanomyces culture to give it a Wild Ambition flair!
