The mixed culture for this beer included strains of brettanomyces isolated from 1970s East German Berliner Weisse. We re-fermented the mature ale on top of just over 140 grams per litre of whole BC blackberries. It stayed on the fruit for weeks, extracting lots of colour and flavour, before bottle conditioning to produce lively natural carbonation.
